Celebrating 15 illustrious years in Hong Kong, PNH Group endeavours to bring the sensational European lifestyle and food culture to the city by carefully hand-sourcing the finest quality gourmet products. Open for booking from 3rd August here, the innovative Iberico Ham Cellar - Signature Experience breaks new ground in gourmet food experiences, and is designed to provide an in-depth understanding of Spanish food culture as well as an appreciation for Spanish gourmet and Iberico ham.
Ham aficionados can look forward to a guided tour of the tasting room including 14 varieties of tapas, and the ham cellar with premium vintage Iberico hams led by PNH Group’s in-house expert and seasoned Slicing Master. A creative 7-course Iberico pairing tapas menu, crafted by Chef Heloise Fischbach of 2 Michelin star restaurant Écriture, is then offered followed by a private shopping experience at the Iberico Bar and in-house shop.
With a passion for imparting knowledge of the best artisanal producers of Iberico ham beyond Spain and bringing you the finest foods from all over, Pata Negra House Group also offers other rare Spanish and French delicacies - Le Gourmet serves the finest caviar, smoked fish, truffles, foie gras and other specialty delights, Tapas Box presents the largest range of Mediterranean tapas for creative meals, while SUMMUM, inspired by the classification of Japanese wagyu beef, showcases the different graded cuts of Iberico ham.

Part One - Start the gastronomic immersion at the Tasting Room
Begin your journey into the world of Spanish gastronomy with a welcome drink along with an informative guided tour of the cellar’s tasting room with Pata Negra’s ham expert. In a room full of premium quality Spanish delicatessen favourites, you can relish in assorted cold cuts including Salami Iberico Bellota, Chorizo Iberico Bellota and a 20-months Serrano Ham with melon along with mouth-watering aged Manchego cheeses, cooked Galician octopus leg, pitted Manzanilla olives and other Spanish delights.
Part two - Discover a first in Asia at The Iberico Ham Cellar
Uncover the secrets behind Spain’s finest collections of Iberico ham with the skillful Slicing Master who will introduce you to 5 vintage hams from the Iberian Peninsula. Gain a deeper understanding of ham classification and an appreciation of Iberico ham as you learn about the unique artisanal process of ham creation, from its land origin to its curing process. From the mountains of Salamanca in Guijuelo to the deep south of Andalusia near Jabugo, the vintages range from 32 - 60 months.
Feast your eyes with a glimpse of the rare, almost-extinct Iberico breed - the Rubio Dorado. With only 120 pieces of this ham produced each year, the Rubio Dorado is exclusively available at only three locations worldwide, Pata Negra House Group’s Iberico Ham Cellar, city’super and Harrods London.
Part three - Indulge and delight at The Iberico Bar
Dive into a tantalizing culinary experience at the cellar’s private kitchen, The Iberico Bar. The Iberico Ham Cellar, designed by In Situ & Partners interior design firm, is an indulgent 360-degree experience taking the visitor on a sensory journey through several areas to discover culinary Spanish delights. The journey takes guests from their daily lives to discover the essence of Spanish culinary traditions. From the terracotta corridors to the distressed feature wall by Hong Kong-based French muralist and visual artist Elsa Jean de Dieu, reminiscent of aged Mediterranean walls, the experience brings the culture and history of Pata Negra House to HK. The raw and rustic materials and finishes chosen aim to recreate a traditional Spanish ambiance which contrasts but also compliments the state-of-the-art open kitchen.
