This free range and hormone-free Iberico pork is meant to be served medium rare or pink to enjoy the tenderness of the meat and the exquisite flavours of its fat marbling. The Iberico pork loin is one of our favourite cuts, and in our opinion, on a par with Wagyu or Angus beef tenderloin.
• Our succulent Iberico pork medallions only need to be seared for 1.5 minutes on each side, then simply season with Maldon salt and black pepper.
• Serve with potatoes and your favourite curry or steak sauce for the perfect enrichment.
• We recommend medium and full bodied red wines for accompaniment.
